National Cupcake Day

We celebrated National Cupcake Day on the 13th of June in style with some beautiful cupcakes from our very own SoundBite catering. Now SoundBite are happy to share their cupcake recipe so you can make your own at home!

Ingredients

Cupcakes
  • 120g Softened Butter
  • 2 Eggs
  • 1tsp Vanilla Extract
  • 120g Caster Sugar
  • 1 pinch of Salt
  • 120g Self Raining Flour
Icing
  • 140g Icing Sugar
  • 140g Softened Butter
  • 2 tbsp Milk
  • Food Colouring of your choice

Method

  1. To begin preheat oven to 190c and add cupcake cases to a cupcake tray
  2. Mix the cupcake mixture together until it is combined
  3. Once smooth, evenly spread the mixture across the cupcake cases and bake for 15-20 minutes
  4. Stir the icing ingredients together until it is a thick, paste texture
  5. Split the icing into two seperate bowls and add your chice of food colouring to ach. Once the colour is even add icing into the piping bags
  6. Once the cupcakes are cool, pipe icing onto cakes and decorate as desired
