SoundBite are sharing their favourite Easter treat, ideal to enjoy this Bank Holiday Weekend!

Ingredients
For 16 pieces
- 115g Unsalted Butter
- 1 Egg
- 1 tsp Vanilla Extract
- 1 tsp Bicarb Soda
- 1 tbsp Cornflour
- 1/2 tsp Salt
- 275g Plain Flour
- 55g Granulated Sugar
- 135g Light Brown Sugar
- 300g Mini Eggs
- 100g Plain Chocolate
Method
1 – To begin preheat oven to 190° and line a 9inch baking tray with grease proof paper
2- Combine the bicarb, cornflour, salt and plain flour together
3 – Now melt the butter and whisk in the sugar until it dissolves. Add the egg and vanilla to the butter and sugar and whisk it all together until you have a smooth mixture
4 – Stir the flour mix into the butter mixture and add 250g crushed mini eggs and 100g chunked plain chocolate. Stir until a dough is formed
5 – Press dough evenly into lined baking tray. Use last 50g of Mini Eggs to decorate the top
6 – Bake for 20 mins, then cool before cutting into 16 pieces to serve
